Indian Pumpkin Vegetables with Coconut

Instructions
Dice the pumpkin flesh and onions; Cut the leek and chilli into small pieces. Mix the pumpkin, onions and chilli and sauté while stirring. Deglaze with vegetable stock and add the vinegar essence, ground coriander, salt and pepper, bring to the boil and stew for around 10 minutes.
Then add the leek and simmer for another 10 minutes. Then add the cream and coconut milk and bring to the boil with the pot open. Pour salt, pepper and the fresh coriander over it.
This goes well with rice or potatoes.
