For the dough:

  • 25 g butter
  • 100 ml coconut milk
  • 75 g rice flour (available in the Asian shop)
  • 1 pinch (s) salt
  • 2 teaspoons sugar
  • 3 tablespoon desiccated coconut

Instructions

  1. Peel the bananas and cut into two or three equal pieces.
  2. Melt the butter in a small saucepan over low heat. Put the coconut milk, rice flour, salt, sugar, desiccated coconut and the melted butter in a bowl. Use the whisk of the hand mixer to form a smooth dough. It should be the consistency of mayonnaise.
  3. Heat the oil in a tall saucepan. Turn the bananas in the batter and fry them in the hot fat. Be careful, it can splash!
  4. Remove and drain well on kitchen paper. It is best to serve immediately, with ice or honey if you like.
  5. Instead of bananas, you can also use pieces of pineapple (canned or fresh).
