  • 4 zucchini
  • 2 red pepper (s)
  • 4 tablespoon olive oil
  • 2 teaspoons, leveled salt
  • 2 tablespoon herbs, Italian, dried
  • 1 pinch (s) chili powder or flakes

Instructions

  1. Preheat the oven to 200 degrees top / bottom heat.
  2. Peel the onions, cut in half and cut into large cubes. Peel the garlic and chop in to fine slithers. Wash the zucchini, cut off the roots and stems, cut in half, cut again and cut into large cubes. Wash the peppers, cut in half, remove the white skins and seeds and also cut into large cubes.
  3. Put the vegetables in a large flat baking dish. Pour the olive oil, salt, chilli powder, Italian herbs and strong pepper over it and mix everything together, preferably with your hands.
  4. Stew in the oven for 30 minutes. Then stir well and cook for another 15 to 30 minutes, depending on how firm you want the vegetables to be.
  5. So I serve the oven vegetables as a side dish.
  6. As a main course, I spice it up with pitted olives and serve with baguette. Please note: In this case, however, the dish belongs to the carbohydrate group.
