Ingredients

  • 1 cube yeast
  • 270 g milk
  • 60 g suar
  • 80 g butter

Instructions

  1. Set the oven to 50 ° C top / bottom heat.
  2. Measure the milk and place in the microwave for 30 seconds. Dissolve the cube of yeast in the lukewarm milk, but you can also use dry yeast. 1 teaspoon of sugar and one teaspoon. Add the flour and stir everything together vigorously. Place in the oven for about 15 minutes.
  3. Put sugar, butter, flour, salt, cinnamon and vanilla sugar in the food processor with a dough hook, if you have it at home and like it, you can add 40 g of baking malt. This will make the yeast rise even better. Then add the yeast milk and knead everything for about 5 minutes on a low level to form a smooth dough.
  4. Place the finished dough on a floured work surface and knead again by hand. Divide the dough into 12 portions and flatten each portion. As with all types of bread and rolls, you should now work from the outside in to create the necessary surface tension.
  5. Shape long rolls and place on a baking sheet lined with baking paper. Let rise in the oven at 50 ° C for about 15 minutes. Put some milk in a deep plate and mix the breadcrumbs and cinnamon in a second plate. Take the dough out of the oven and first toss completely in the milk and then completely in the breadcrumbs. Please be careful not to press the dough too tightly. Place the breaded dough pieces on the baking sheet at a distance and put them back in the warm oven for 30 minutes.
  6. After the second resting phase, take the tray out of the oven and set it aside covered with a clean cloth. The dough shouldn`t stand too cold and shouldn`t be drafted.
  7. Heat the oven to 180 ° C top / bottom heat.
  8. When the oven is hot, bake the rolls on the middle shelf for about 30 minutes. Immediately after baking, spray the Kanelbrötchen with two to three puffs of water from the spray bottle. This step is not a must, it was just a tip from a baker so that the crust is top.
  9. Place the rolls on the baking rack so that no moisture builds up from below.
  10. They taste best when they are still lukewarm.
  11. For all vegans or lactose intolerants, you can of course replace the milk with soy milk and the butter with margarine.
