Kharcho Soup (no Nuts)

Due to its interesting and piquant taste, kharcho soup is popular not only in Georgia. I propose a recipe for a very fragrant kharcho soup made from beef with adjika, herbs and a mixture of herb khmeli-surely. Despite the absence of walnuts in the soup, the kharcho turns out to be very rich and tasty.

Ingredients

  • Beef – 500 g
  • Rice – 120 g
  • Onions – 300 g
  • Tomato paste – 1 tbsp
  • Adjika – 1-2 tbsp (to taste)
  • Hot red pepper – 3-4 g (to taste) + for serving
  • Garlic – 3 cloves
  • Vegetable oil – 45 ml (3 tablespoons)
  • Green onions – 40 g + for serving
  • Fresh parsley – 40 g + for serving
  • Fresh cilantro – 10 g
  • Hmeli-suneli – 1 teaspoon with a large slide
  • Bay leaf – 2 pcs.
  • Black peppercorns – 6-7 pcs.
  • Salt to taste
  • Water – 2.5 l

Directions

  1. We prepare all the necessary products.My beef and cut into pieces. Fill the meat with water, bring to a boil and remove the foam. Reduce heat and cook over low heat for about 1.5 hours, until the meat is tender.

  3. When the beef is done, add the rice and cook for 10 minutes over medium heat.
  4. Peel the onion and cut into cubes.
  5. Heat vegetable oil in a frying pan and fry the onion over low heat, stirring for 10-15 minutes, until golden brown.
  6. Cut red hot peppers into thin rings. The amount of pepper depends on your taste. I used about a third of a small pepper pod. It turned out quite spicy to my taste. It is also worth considering the variety of pepper.
  7. Add hot peppers and tomato paste to the fried onions.
  8. Fry the onion, pepper and tomato paste for about 2 minutes over medium heat.
  9. Put the fried onions with tomato paste in a saucepan with meat and rice. Add bay leaves and black peppercorns. Cook for 5 minutes.
  10. Then we send adjika, hops-suneli to the pan, salt to taste and cook for another 3-5 minutes.
  11. Finely chop the green onion, parsley and cilantro. Peel and chop the garlic with a garlic press.
  12. Add herbs and garlic to the kharcho.
  13. Let the soup boil and immediately remove from the heat.
  14. The kharcho soup is ready. You can additionally add fresh parsley, green onions and chili peppers to each serving
