Homemade noodles are prepared for this famous dish and served with a meat sauce called waju. How to make waja for lagman and an easy way to make homemade noodles are in this recipe.

Servings: 6

Ingredients

  • Beef – 600 g
  • Potatoes – 200 g
  • Bulgarian pepper – 50 g
  • Carrots – 80 g
  • Radish (optional) – 50 g
  • Onions – 50 g
  • Garlic – 10 g (2-3 cloves)
  • Tomato paste – 40 g
  • or fresh tomatoes – 3-4 pcs.
  • Ground pepper (black and red) – 0.25 teaspoon (to taste)
  • Salt to taste
  • Meat broth or water – 1 l (to taste)
  • Vegetable oil (or fat) – 30 g
  • Greens (for serving) – 2 tbsp (to taste)

    For the test:

  • Wheat flour – 300 g
  • Eggs – 2 pcs.
  • Water – 100 g

How to cook lagman at home:

Directions

  1. To prepare the noodles, the flour is sieved into a bowl.
  2. Eggs and water are added to the flour. The unleavened dough is kneaded.
  3. Pouring flour if necessary, roll the dough thinly into a layer about 2 mm thick.
  4. The rolled dough is sprinkled with flour, rolled up, and cut into thin long noodles.
  5. Boil 2 liters of water, add salt to the water (about 1 teaspoon). Dip the noodles into boiling water, bring to a boil and boil the noodles in salted water until cooked for 3-4 minutes.
  6. The finished noodles are thrown into a colander, washed in cold water.
  7. To prepare meat sauce (waju) for the lagman, the meat is cut into small pieces and salted.
  8. Peel and wash onions and carrots. Cut the carrots into strips and the onions into cubes.
  9. Bell peppers and radishes (optional) are peeled, washed, and cut into strips.
  10. The potatoes are peeled, washed, and cut into cubes.
  11. Peel and chop the garlic.
  12. Preheat a frying pan (or cauldron), add vegetable oil (or fat) to it. Spread out the meat.
  13. The meat is fried over medium heat, stirring, until golden brown (10-15 minutes).
  14. Then add carrots, onions, bell peppers to the meat.
  15. Mix everything and continue to fry the meat with vegetables for another 8-10 minutes, stirring occasionally.
  16. They put everything in a cauldron.
  17. Then add potatoes, chopped into cubes, finely chopped garlic, tomato paste, or chopped fresh tomatoes.
  18. Season with black and red pepper, salt. Pour in water or broth and stew waju (meat sauce with vegetables) over low heat until tender, 30-40 minutes.
  19. To serve lagman, the noodles are heated by dipping them into hot water and placed in the cashiers or a deep plate. Pour the cooked meat sauce over the noodles and sprinkle the lagman with chopped herbs.
