Lagman

Cooking delicious lagman at home.

Cook: 1 hour 30 minutes

Servings: 4

Ingredients

  • For noodles:
  • Flour – 400 g
  • Water – 200 ml
  • Salt – 1 teaspoon
  • Vegetable oil – 1 tbsp

    For gravy:

  • Meat (pulp) – 400 g
  • Potatoes – 2-3 pcs.
  • Radish – 1 pc.
  • White cabbage – 100 g
  • Beets – 1 pc.
  • Bulgarian green pepper – 1 pc.
  • Tomatoes – 3-4 pcs.
  • Carrots – 2 pcs.
  • Bulb onions – 3-4 pcs.
  • Garlic – 6-7 cloves (to taste)
  • Salt – 1 tbsp (to taste)
  • Ground black pepper – 1 teaspoon (to taste)
  • or ground red hot pepper – 0.25 teaspoon (to taste)
  • Vegetable oil – 150 g

Directions

  1. Sift flour. Add salt to the water and mix very well. Pour the water and salt into a bowl of flour.
  2. Mix thoroughly with a spoon.
  3. Knead a soft dough. At the end of kneading, add vegetable oil to the dough and knead for a couple of minutes. Cover the dough with a towel and leave for 15-20 minutes.
  4. Roll out the dough thinly, sprinkle with flour. Leave on for 5-10 minutes to dry the dough.
  5. Roll the dough into a roll, cut the noodles with a sharp knife.
  6. The lagman noodles are ready.
  7. Boil 3 liters of water, add 1.5 teaspoons of salt. Put the noodles in boiling salted water. While stirring, bring to a boil, and cook the noodles until tender, 2-3 minutes over high heat.
  8. Throw the finished noodles in a colander, while retaining a little broth – it will still come in handy. Rinse the noodles two to three times in cold water and drain.
  9. Prepare the gravy in a separate bowl. To do this, cut the meat into medium-sized cubes.
  10. Peel the potatoes, wash, cut into small cubes.
  11. Peel the radish, wash, cut into small cubes.
  12. Peel the carrots, wash, cut into strips.
  13. Cut the cabbage into strips.
  14. Peel the beets, wash, cut into strips.
  15. Peel the onion, wash, cut into rings.
  16. Wash the bell peppers, cut into rings.
  17. Wash the tomatoes and cut them into small pieces. Peel and chop the garlic very finely.
  18. Heat oil in a frying pan, add meat.
  19. Fry the meat over medium heat, stirring occasionally, for 8-10 minutes, until golden brown.
  20. Then put tomatoes and garlic in a frying pan with meat and continue to fry for 2 minutes.
  21. Then add onions, cabbage, carrots, radishes, bell peppers, beets, and potatoes.
  22. Mix everything several times, salt, season with black or red pepper, pour a little broth in which the noodles were cooked.
  23. Simmer meat with vegetables over low heat for 30-40 minutes.
  24. When the gravy is ready, dip the noodles in boiling water. Transfer half of the noodles to a plate, pour over half of the gravy. Top with a layer of noodles and gravy.
