Ingredients

For the lasagna:

  • 1 kg Maultaschen, Swabian
  • 2 onions)
  • 150 g smoked meat, Black Forest, cold smoked
  • 200 g Emmentaler, in one piece
  • 1 tablespoon lard

For the sauce:

  • 2 tablespoon, heaped lard
  • 2 tablespoon flour
  • 200 ml meat broth
  • 75 ml beer, Swabian

For seasoning:

  • Fleur de sel
  • sugar
  • Pepper, greener
  • Macis powder, alternatively nutmeg
  • Leaf parsley

Instructions

  1. Cut the onions into thin slices and dice the smoked meat. Put 1 tablespoon of lard in a pan and fry the onions and smoked meat. Season the meat with salt, sugar and green pepper. At the same time, cut the dumplings in half lengthways to make thin slices.
  2. Remove the lightly roasted onions with the smoked meat from the pan. Melt 2 tablespoons of lard in the pan, add the flour and stir. Deglaze the flour with the beer and the meat stock and bring to the boil briefly. Season the roux to taste with salt, green pepper, mace and leaf parsley.
  3. Layer the dumplings, the smoked meat and onion mixture and the sauce in a baking dish. Grate the Emmentaler cheese and cover the first layer. Repeat this three times so that there are three layers.
  4. Bake the lasagne in the oven at 180 ° C for 20 minutes.
