Lavash Envelopes Stuffed with Chicken, Tomato, Cheese and Herbs

A very quick recipe for an incredibly tasty snack – lavash envelopes with a juicy filling of chicken, tomato, cheese, and herbs.

Cook: 10 min.

Ingredients

  • Thin lavash – 1 sheet
  • Boiled chicken fillet – 150 g
  • Tomato – 1 pc.
  • Cheese (I have suluguni) – 100 g
  • Green onions – 1 bunch
  • Fresh green basil – a few twigs
  • Eggs – 2 pcs.
  • Milk – 50 ml
  • Sour cream (or Greek thick yogurt) – 3 tbsp
  • Garlic – 1 clove
  • Salt – 2 pinches (to taste)
  • Vegetable oil – for frying

Directions

  1. Peel and grate the garlic or squeeze through a press. Add chopped garlic and 1 pinch of salt to sour cream (or yogurt). Stir and leave the sauce to infuse.
  2. Cut the tomato into half circles. Cut the boiled chicken fillet and cheese into thin slices. Chop the onion and basil finely enough.
  3. Cut the lavash into strips about 15 cm wide (the length is about 45 cm, but it does not really matter).
  4. Visually select a square from one edge of the pita strip and grease it with sour cream sauce. Top the sauce with chicken fillet, basil, green onions, tomato, and cheese. Salt a little. Fold the square of pita bread with the filling to make a triangle.
  5. Then roll the pita bread so that you also end up with a triangle. The filling should be closed on all sides.
  6. Shake eggs with 1 pinch of salt and milk. Dip pita envelopes from all sides into ice cream (eggs with milk).
  7. Put the pita bread with the filling in a pan with heated vegetable oil. Fry lavash envelopes over medium heat for 3-4 minutes on each side, until golden brown. Optionally, “seal” the ends of the lavash envelopes.
  8. Put the fried lavash envelopes with chicken, tomatoes, cheese, and herbs on a paper towel to absorb excess fat. After that, a pita snack can be served to the table or given to children to school, taken with you to work or to a picnic. Bon Appetit!
