Layered Salad “Pomegranate Heart” with Smoked Chicken, Rice, Beets and Cucumbers

I propose a salad “Pomegranate Heart” with smoked chicken, rice, beets, and pickled cucumbers, original in its taste and serving, which is ideal for a romantic dinner on Valentine’s Day or on another holiday. Pomegranate seeds and smoked chicken set the flavor.

Ingredients

  • Beets – 180 g (1 pc.)
  • Smoked chicken – 100 g
  • Pomegranate – 100 g (½ pc.)
  • Pickled cucumber – 60 g (1 pc.)
  • Rice – 30 g (raw weight)
  • Bulb onions – 1 pc. (30 g)
  • Eggs – 2 pcs.
  • Mayonnaise – 100 g

Directions

  1. We wash the beets under running water. Then boil the beets until tender, trying not to overcook. Small beets are cooked for 40 to 60 minutes. We check the readiness with a toothpick. Take the finished beets out of the broth and let them cool completely.
  2. Boil rice. To do this, wash the rice, place it in a small saucepan or stewpan, add salt. Pour 200 ml of boiling water and cook under the lid until cooked over low heat, about 15 minutes. Then we put the rice in a colander.
  3. From 30 g of raw rice, about 100 g of cooked rice is obtained.
  4. Boil the eggs hard-boiled (8-10 minutes after boiling), then cool in cold water. Peel and rub the cooled eggs on a coarse grater or cut into small cubes.
  5. Peel the boiled beets and rub on a coarse grater.
  6. Cut the smoked chicken into small cubes.
  7. Peel the onion, wash and cut into small pieces.
  8. Cut the pickled cucumber into small cubes and slightly squeeze out the excess liquid.
  9. We form a festive salad in the shape of a heart. Put boiled rice on a flat plate, giving it a heart shape, grease the rice a little with mayonnaise.
  10. Put the chicken on top of the rice and grease it with mayonnaise.
  11. Put the pickled cucumber on the next layer.
  12. Put eggs on a layer of cucumber and cover with mayonnaise.
  13. Put the onion in the next layer.
  14. Put the beets on top of the onions. Now we align the edges of the puff salad, giving the heart a nice, even shape using a silicone spatula or a wide knife.
  15. We decorate the sides of the salad with mayonnaise.
  16. Cover the top of the salad with pomegranate seeds.
