Lean Chocolate Cake with Cherries

Lean cherry cake recipe. This chocolate cake is easy to make, using available ingredients, and most importantly, without adding eggs, milk, or butter. The cake turns out to be very tasty – it combines chocolate cakes and cherry cream well. The cake is covered with lean chocolate icing. It`s worth cooking!

Ingredients

  • For the dough:
    Vegetable oil – 3 tablespoon
    Water – 0.5 cups
    Cocoa powder – 2 tablespoon
    Sugar – 0.5 cups
    Flour – 1 glass
    Baking powder – 1 teaspoon.
    Salt – a pinch

  • For the cream:
    Cherry juice (or cherry compote) – 1 glass
    Semolina – 2 tbsp
    Sugar to taste

  • For glaze:
    Cocoa powder – 1 tablespoon
    Sugar – 1 tablespoon
    Water – 1 tablespoon
    Vegetable oil – 1 tablespoon
    *
  • Besides:
    Cherries (canned) – 100 g
    Walnuts – 50 g

Instructions

  1. To prepare the cakes, combine all the dough ingredients at once. Mix the chocolate dough. The consistency turns out to be of medium density. Cover the bottom of the form with a diameter of 20 cm with parchment, grease the form with oil.
  2. We spread the dough into a mold, level it. We bake in a preheated oven at 180 degrees for 20 minutes. Check the readiness with a wooden stick.
  3. To prepare the cream, pour cherry juice or compote into a saucepan. Add sugar to taste if necessary. (I use canned cherry juice. It’s sweet, so I don’t add extra sugar.)
  4. Pour in the semolina. Mix and place on the stove. With constant stirring, bring to a boil and boil the cherry cream from semolina for 1-2 minutes until thickened.
  5. Transfer the cherry cream to another container and cool. Beat the cold semolina cream with a mixer for 2-3 minutes until fluffy.
  6. To prepare the chocolate glaze, mix the sugar, cocoa, butter, and water. Put in the microwave for 20 seconds and stir.
  7. Cut the cooled cake into 2 cakes.
  8. Collect the cake. Put the first cake on a plate and grease it with cherry cream. You can also add canned cherries.
  9. Cover with the second crust and cover the chocolate cake with cherries with cooked icing. Sprinkle the cake with chopped walnuts on top.
  10. Lean chocolate cake with cherries is ready.
