Ingredients

  • 7 g dry yeast
  • 0.5 teaspoon ½ sugar
  • 300 ml water, lukewarm
  • 450 g flour
  • 0.5 teaspoon ½ salt
  • 3 tablespoon olive oil
  • 2 tablespoon thyme, dried
  • 2 teaspoons sumac (can be replaced with lemon juice if necessary)
  • 0.5 teaspoon ½ sea salt
  • 1 tablespoon sesame seeds

Instructions

  1. Dissolve the yeast and sugar in the water and let stand for 5 minutes.
  2. Mix the salt and flour. Add the yeast mixture and knead a smooth dough. The dough is still relatively moist, but should come off the bowl wall after 10 minutes. If not, add a little more flour. Cover and let rise for approx. 2 hours. The dough volume should then have doubled. If not, let go.
  3. Prepare Zaatar: To do this, lightly toast the sesame seeds in a pan. Finely mortar the thyme, sumac and sea salt and then mix with the roasted sesame and 3 tablespoons of olive oil. Put aside.
  4. Preheat the oven to 200 ° C.
  5. Knead the dough again briefly and then divide it into 6 - 8 portions. Shape these into balls and roll each ball flat. Brush with Zaatar mixture and bake for 10-15 minutes.
  6. The bread can be eaten warm or cold.
