Ingredients

  • 100 g butter
  • 125 g suar
  • 2 egg (s)
  • 150 g yourt
  • 1 lemon (s), zest and juice it
  • 1 pinch (s) salt
  • 300 grams flour
  • 3 teaspoons baking powder
  • 12 teaspoons jam (orange jam or lemon curd)
  • 1 lemon (s), half juice, the other half whole
  • 75 g powdered suar

Instructions

  1. First, grease the muffin tin or line it with paper liners. Preheat the oven to 190 ° C top / bottom heat.
  2. For the dough, stir the butter with the sugar until foamy, stir in the eggs one by one. Stir in the yogurt with the lemon juice and the grated lemon zest. Mix salt, flour and baking powder, add to the butter mixture and stir briefly by hand.
  3. Spread about half of the dough on the molds, put a teaspoon of jam or lemon curd on each and cover with the rest of the dough. Bake for 20-25 minutes and then leave to cool on a wire rack.
  4. Mix the powdered sugar and lemon juice, brush the muffins with it. First cut the half lemon into at least 3 slices and quarter them each so that 12 small lemon pieces are created. Place these as a garnish on the icing.
