- 1 lemon (s), untreated, the juice it
- 5 tablespoon oil (olives)
- 1 teaspoon caraway seeds
- 5 stalks thyme
- Pepper, freshly ground

- Thoroughly brush the potatoes with the skin and place in a large flat roasting pan. Pour the olive oil, lemon juice and spices over the top and leave to marinate for 30 minutes.
