Lentils Stewed with Pumpkin

An easy, inexpensive, and nutritious meal made from red lentils. Lentils rich in vegetable proteins in combination with pumpkin and onions will become juicy and aromatic. This healthy dish is prepared quickly and not at all difficult!

Ingredients

  • Red lentils – 150 g
  • Pumpkin – 230 g
  • Onions – 55 g (1 medium-sized)
  • Garlic – 1 clove
  • Salt – 0.5 teaspoon (to taste)
  • Ground black pepper – on the tip of a knife
  • Water – 200 ml
  • Vegetable oil – 1-2 tbsp

Directions

  1. Prepare the food you need. It is better to use red lentils, they cook faster.
  2. Peel the onion, rinse and cut into small cubes. Peel the garlic and cut it into thin slices.
  3. Heat vegetable oil in a heavy-bottomed saucepan, add chopped onion and garlic. Fry over medium heat for 2-3 minutes, until soft and lightly browned.
  4. While the onions and garlic are fried, peel the pumpkin, removing the inner fibrous part with seeds and tough skin. Cut the peeled pumpkin pulp into small cubes and add to the pan the onion and garlic.
  5. Pour in water, cover, and bring everything to a boil. Then simmer over low heat for 10 minutes.
  6. Rinse the lentils and send them to the pan with the vegetables. Add salt, black pepper, and stir.
  7. After boiling, cook over low heat for 10-13 minutes, until the lentils are fully cooked.
  8. Lentils stewed with pumpkin are ready! Serve hot immediately after cooking.
