- 1 kg watermelon (s)
- 100 g rocket
- 200 g feta cheese made from sheep`s milk
- 20 g pine nuts
- 2 tablespoon olive oil
- salt and pepper

- Lightly toast the pine nuts in a dry pan. Meanwhile, free the watermelon from the edge and cut into bite-sized pieces. Cut the feta into similar sized pieces. Put the prepared ingredients in a bowl along with the washed rocket. Pour the olive oil, salt and pepper over it and mix the salad.
- All quantities are approximate. Whether more or less of one or the other plays a rather subordinate role here: The result is a deliciously surprising, summer cooling, especially if the watermelon was in the fridge beforehand.
