Lobio with Walnuts

Today I cooked lobio for lunch. This dish will help out in the post. Lobio with walnuts is very tasty and satisfying.

Servings: 4

Ingredients

  • Dry beans – 0.5 kg
  • Large onion – 1 pc.
  • Carrots – 1-2 pcs.
  • Sweet red pepper – 1 pc.
  • Peeled walnuts – 50 g
  • Garlic – 2 cloves
  • Vegetable oil – 2-3 tbsp
  • Ketchup – 3 tbsp
  • Cilantro (or parsley) – 2 tbsp
  • Dry basil – 1-2 pinches
  • Bay leaf – 1 pc.
  • Salt to taste
  • Red pepper – to taste

Directions

  1. Rinse dry beans, soak in water overnight. Rinse again, bring to a boil, boil with bay leaf until tender (about 1.5 hours).
  2. Peel the walnuts.
  3. Drain the water from the finished beans.
  4. Peel and wash the onion, cut into small cubes.
  5. Wash the pepper, remove the seeds, cut into strips.
  6. Peel and wash the carrots. Cut into strips.
  7. Preheat a frying pan, pour in vegetable oil. Put carrots and onions in hot oil. Simmer, stirring occasionally, over medium heat for 3-4 minutes.
  8. Add pepper.
  9. And then add ketchup and spices, simmer for 5 minutes.
  10. Crush the nuts with a rolling pin.
  11. Wash greens and chop finely.
  12. Peel the garlic and chop finely with a knife.
  13. Add nuts to vegetables.
  14. Lightly knead the beans and combine with vegetables, mix.
  15. Add herbs and garlic. Mix.
  16. Simmer lobio with walnuts for about 3-4 minutes.
  17. Lobio with walnuts is ready.
