Mamirah’s Appenzeller Cheese Salad

Ingredients

  • 1 small Can / s of pineapple
  • 1 leek, large, in rings
  • 1 red pepper (s), diced
  • 2 handfuls of cheese, Appenzeller, diced
  • 1 handful of cherry tomato (s)
  • 3 tablespoon mayonnaise
  • 3 tablespoon yogurt
  • salt and pepper
  • sugar

Directions

Prep time: 15 minutes
Rest time: 12 hours
Total time: 12 hours 15 minutes

Put the ingredients in a salad bowl, mix the yoghurt and the mayo into a dressing, season with salt, pepper + a pinch of sugar, possibly stir with a little pineapple juice until smooth.

Mix the dressing through the salad ingredients and let the salad soak in the fridge for one night.

It tastes best when the cheese is slightly soaked.
