Mandirmak (Vegetables with Egg in a Pan)

Mandirmak is a dish of Dagestan cuisine that is cooked in a pan. We recommend adding this hearty meal to your morning menu. The main ingredients are vegetables, which are first stewed and then filled with eggs.

Ingredients
- Chicken eggs – 4 pcs.
- Potatoes – 1-2 pcs.
- Fresh tomatoes – 2 pcs.
- Bulb onions – 1 pc.
- Salt to taste
- Spices to taste
- Greens – 2 branches
- Vegetable oil – 30 ml
Directions
- For cooking vegetables with an egg in a pan, prepare the necessary ingredients.
- Peel the onions and peel the potato tubers.
- Cut the onions into rings or half rings.
- But grind the peeled potatoes using a grater.
- Tomatoes should be cut into rings, but first dip the tomatoes in boiling water to remove the peel.
- So, the ingredients for the mandirmak are ready. Heat vegetable oil in a frying pan. We spread the onion rings first. Without forgetting to stir, fry the onion until half cooked.
- Put the tomato rings on the onion.
- On tomatoes – grated potatoes. Season vegetables with salt and spices (for example, ground pepper). Simmer over medium heat (you can stir). In parallel, beat the chicken eggs with a pinch of salt.
- Fill the vegetables with the resulting egg mass. Cover the pan with a lid. Simmer vegetables with an egg in a pan until cooked.
- Serve the Dagestan vegetable dish hot, spreading it out on plates. Sprinkle the mandirmak with fresh herbs if desired, chopping it beforehand.
