Mediterranean Cream Cheese with Sun-dried Tomatoes

Ingredients

  • 2 cups cream cheese, reduced fat (e.g. Philadelphia so light, 5% absolute fat)
  • 5 tomato (s), dried in oil
  • 5 basil leaves, large
  • 1 clove garlic
  • 4 tablespoon parmesan, grated
  • 2 teaspoons mustard, medium hot
  • salt and pepper

For the set:

  • some basil, fresh leaves

Instructions

  1. Dab the sun-dried tomatoes. Peel and squeeze the garlic.
  2. Put the cream cheese, tomatoes, basil, garlic, Parmesan and mustard in a tall blender and puree with the hand blender until a homogeneous cream is obtained. Season to taste with salt and pepper.
  3. Fill into bowls and garnish with basil. Tastes great on toasted white bread.
