- Wash the aubergines and cut them into slices about 5 mm thick. Salt it well and let it sit on a sieve for at least an hour.
- Put the flour on a plate and mix with a little pepper. Turn the aubergine slices in it and fry them in plenty of hot oil until golden brown.
- Serve fresh with grilled meat or tzaziki.
- You can simply fry leftovers in the pan the next day.
