Instructions

  1. Wash the aubergines and cut them into slices about 5 mm thick. Salt it well and let it sit on a sieve for at least an hour.
  2. Put the flour on a plate and mix with a little pepper. Turn the aubergine slices in it and fry them in plenty of hot oil until golden brown.
  3. Serve fresh with grilled meat or tzaziki.
  4. You can simply fry leftovers in the pan the next day.
