Mixed Solyanka with Chicken Wings

I love okroshka and even more meat. A hearty soup with a slight sourness is simply delicious.

Cook: 1 hour 30 mins

Servings: 8

Ingredients

  • Chicken wings – 700 g
  • Water – 3 l
  • Smoked brisket – 300 g
  • Bacon – 300 g
  • Homemade sausage – 300 g
  • Carrots – 150 g
  • Onions – 150 g
  • Pickled or pickled cucumbers – 200 g
  • Tomato paste – 3-5 tbsp
  • Capers (optional) – 3 tbsp
  • Black pepper – to taste
  • Bay leaves – 2-4 pcs.
  • Vegetable oil – 2-3 tbsp
  • Lemon – to taste
  • Greens to taste
  • Olives – to taste

Directions

  1. Wash the wings, pour cold water. Remove the froth, season with salt and cook over low heat, covered, until tender.
  2. Meanwhile, peel and wash the onions and carrots. Dice the onion. Grate carrots on a coarse grater.
  3. Dice the meat, sausage and bacon.
  4. Cut the cucumbers into cubes.
  5. Preheat a frying pan, pour in vegetable oil. Place the onions and carrots.
  6. Fry onions and carrots in vegetable oil, stirring occasionally, for 3-4 minutes.
  7. Add cucumbers, fry for 2-3 minutes. Add tomato paste, simmer for 5-7 minutes over low heat.
  8. Lightly fry the meat delicacies in vegetable oil, stirring for 2-3 minutes.
  9. Add frying, deli meats, olives with brine, capers (optional) to the pan. Season with salt and pepper. Add bay leaves. Cook the mixed hodgepodge for 5-7 minutes.
  10. Wash and finely chop the herbs.
  11. Add herbs and lemon wedges. Remove from heat. Let the hodgepodge brew for 10-15 minutes under the lid.
  12. Assorted meat solyanka with chicken wings is ready.
