Muffins with Meat and Cheese

Snack muffin recipe. Fluffy muffins with meat and cheese are perfect as an addition to breakfast, lunch or dinner.

Ingredients

  • Wheat flour – 1 glass
  • Milk – 1 glass
  • Corn flour – 0.5 cups
  • Grated cheddar cheese – 0.5 cups
  • Vegetable butter or ghee – 0.25 cups
  • Sugar – 2 tbsp
  • Baking powder – 2 teaspoon
  • Chicken eggs – 2 pcs.

  • For the meat filling (9 glasses):
  • Minced pork with spices (kupaty) – 900 g
  • Ham – 500 g
  • Bacon – 225 g
  • Bulb onions – 3 pcs.
  • Garlic – 4 cloves
  • Parsley – 1 bunch
  • Ground black pepper – 0.5 teaspoon

Directions

  1. Prepare the meat filling. Chop the bacon and ham.
  2. Finely chop the onion. Chop the garlic. Wash and chop the parsley.
  3. Fry the bacon in a large skillet over medium heat until crisp.
  4. Place the bacon on a paper towel with a slotted spoon and pat dry. Drain the bacon fat from the pan; you don’t need it.
  5. Heat the frying pan again over medium heat. Add minced meat, onion and garlic. Cook, stirring occasionally, until the meat is brown.
  6. Add bacon, ham, parsley and pepper. Refrigerate. We need 1 glass of prepared minced meat. The rest of the minced meat can be divided in portions and frozen (frozen minced meat can be stored for 3 months).
  7. Preheat oven to 200 degrees. Grease small muffin tins. In a bowl, combine wheat and corn flour, sugar and baking powder.
  8. Whisk milk, butter and eggs in a separate bowl. Pour the milk mixture into the flour and stir until smooth.
  9. Add 1 glass of meat filling and grated cheese to the dough. Mix. Spoon the dough into the molds. Bake muffins with meat filling and cheese for 15-17 minutes, until golden brown. Willingness to check with a wooden stick.
  10. Cool in tins on a wire shelf for 5 minutes. Use a small spatula or knife to remove the snack muffins from the molds. Drizzle with maple syrup if desired.
