Ingredients
- 250 g whole wheat pasta
- 1 packet feta cheese
- 400 g mushrooms
- 100 g lamb`s lettuce or rocket
- 6 tablespoon vinegar
- 100 ml oil
- 5 tablespoon water
- 1 teaspoon salt
- 2 teaspoons sugar
- 1 teaspoon pepper
- 20 g basil
- 60 g sunflower seeds
- Vegetable broth for cooking the pasta

- Place a saucepan with vegetable stock and cook the whole wheat pasta in it until al dente.
- Mix the dressing of oil, vinegar, water, sugar, pepper, salt and basil.
- When the pasta has cooled down, mix it with the dressing and let it steep for about two to three hours. I`ve already made the salad without the steeping, but it just tastes better when the salad is steeped.
- Now clean the mushrooms and cut them into slices. Then fry the mushrooms until they are nice and crispy, they shouldn`t draw any water and shouldn`t get too dark, so stay there and set the temperature quite high. If you like, you can also add the mushrooms unroasted.
- Dice the feta cheese, clean the lamb`s lettuce and chop up a little if necessary. If you like, you can also use arugula.
- Now add the mushrooms, feta cheese and lamb`s lettuce to the pasta and fold in well.
- Finally, roast the sunflower seeds in a pan and add to the salad. But be careful, they get dark quickly. The kernels give the salad that certain kick.
