Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon tomato paste
  • 1 small Can (s) tomato (s), cut into pieces
  • 200 ml vegetable stock
  • Chilli pepper (s), dried
  • rosemary
  • Thyme
  • 1 pinch (s) sugar
  • 3 tablespoon olives, green or black
  • Pepper, possibly salt

Instructions

  1. Heat the oil and sauté the tomato paste in the pan.
  2. Add the tomatoes, add the vegetable stock and reduce a little.
  3. Cover and simmer over medium heat for about 5 minutes.
  4. Season to taste with the mentioned spices.
  5. You can even let Saltimbocca (recipe in my profile) steep in this sauce.
  6. In the meantime, cook pasta (e.g. penne).
