Ingredients

For the dough:

  • 500g flour
  • 1 cube yeast
  • 80 g suar
  • 80 g butter, melted and cooled
  • 1 egg (s)
  • 250 ml milk
  • some lemon zest
  • 1 pinch (s) salt

For the filling:

  • 80 g marzipan paste
  • 125 ml cream
  • 150 g almonds, round
  • 1 egg (s)
  • 70 grams sugar
  • cinnamon
  • Rum flavor

Instructions

  1. Mix the ingredients for the dough into a yeast dough and let it rise for 30-45 minutes.
  2. During this time, use the ingredients for the filling to make the marzipan filling. To do this, chop the marzipan mixture into pieces and puree with sugar and cream in a blender, then stir in the remaining ingredients.
  3. Knead the yeast dough again briefly and then roll it out into a 30 x 60 cm sheet. Spread the marzipan and almond mixture on top and roll up the plate from the long side. Shape the roll into a pretzel with the seam down on a baking sheet lined with baking paper, brush with the cream and cut in a zigzag at the top so that the filling comes into its own.
  4. Let rise for another 30 minutes.
  5. Bake at 180 ° C fan oven or 200 ° C top / bottom heat for 25 - 30 minutes. If necessary, cover towards the end so that the pretzel doesn`t get too dark.
  6. We like our pretzel with frosting and sliced almonds as a topping, but that`s a matter of taste.
