Nut-Coffee Cake with Streusel

Airy, soft, with coffee aroma and taste, with pleasant crunchy pieces of nuts and crumbly crumbs on top – this cake will be appreciated primarily by coffee lovers.

Servings: 8

Ingredients

  • Milk – 150 ml
  • Butter (softened) – 80 g
  • Eggs (category C1) – 2 pcs.
  • Sugar – 150 g
  • Flour – 250 g (2 cups with a capacity of 200 ml)
  • Walnuts – 50 g
  • Instant coffee (powder or granules) – 2 teaspoon
  • Baking powder – 1.5 teaspoon (no slide)
  • Salt – 1 pinch
  • Water (boiling water) – 2 tbsp

For Streisel:

  • Butter (cold) – 40 g
  • Sugar – 50 g
  • Flour – 75 g
  • Baking powder – on the tip of a knife
  • Water (cold) – 1 tbsp

Directions

  1. Prepare the streusel first. To do this, combine flour, sugar, and baking powder in a bowl. Mix thoroughly.
  2. Cut the butter into small pieces and add to the flour mixture. Pour in 1 tablespoon. a spoonful of cold water.
  3. Grind the mass until crumbs are obtained. Send the bowl of crumbs to the refrigerator while you cook the pie dough. Turn on the oven to heat up to 180 degrees.
  4. Lightly chop the nuts with a knife.
  5. Pour boiling water over instant coffee (2 tablespoons). Stir.
  6. Pour in milk. Stir again.
  7. Combine soft butter with sugar and salt in a deep bowl. Beat with a mixer for 3-4 minutes.
  8. Then add eggs one at a time. Beat the mixture thoroughly after each addition until smooth.
  9. Then pour in the coffee and milk solution. Beat the mixture for 1 minute. The mass will stratify at this stage – this is normal.
  10. Add the sifted flour and baking powder.
  11. Mix everything thoroughly until a smooth dough is obtained.
  12. Finally, add the chopped nuts and stir into the dough.
  13. Cover a mold with a diameter of 22-24 cm with baking paper. Fill out the form with the test.
  14. Remove the crumb from the refrigerator and sprinkle it on top of the dough.
  15. Bake the streusel nut-coffee cake in an oven preheated to 180 ° C for about 45-60 minutes (the time varies depending on the characteristics of the particular oven). Check the readiness of the pie with a wooden skewer – if you pierce the finished pie with a skewer in the center, it should come out without traces of sticky dough.
  16. Remove the finished cake from the pan and leave it on the wire rack to cool.
