Ingredients

For the dough:

  • 400 g flour
  • 0.5 ½ cube yeast
  • 50 grams sugar
  • 200 ml milk
  • 1 egg yolk
  • 1 teaspoon salt
  • 0.5 ½ orange (s), the peel it
  • 100 g butter

For the filling:

  • 2 egg whites, salt
  • 100 g suar
  • 200 g almond (s), round
  • 0.5 ½ orange (s), the juice it
  • 1 egg yolk
  • 1 tablespoon milk
  • 1 teaspoon sugar
  • 50 g almond (s), chopped

Instructions

  1. Sift the flour into a bowl. Warm the milk, crumble the yeast and mix it with the sugar. Pour into the flour, add the egg yolk, butter, salt and orange peel and knead everything with the dough hook to form a smooth, supple dough.
  2. Cover and let rise in a warm place for a good 1 hour.
  3. Then roll out the dough on a carefully floured work surface into a rectangle about 4-5 mm thick.
  4. For the filling, beat the egg whites with a small pinch of salt until stiff, then gradually pour in the sugar and beat until it is firm.
  5. Add the almonds, orange peel and juice and carefully fold in everything.
  6. Now spread this mixture onto the rolled out dough and cut into three even strips. Now roll them up from the longer side so that you get three strands that are as even as possible. Now weave a braid out of it.
  7. Place the braid on a baking sheet lined or greased with baking paper, cover and let rise for another 20 minutes.
  8. Meanwhile preheat the oven to 180 ° C top / bottom heat.
  9. Beat the egg yolks with milk and sugar and brush the braid with it. Sprinkle with the chopped almonds. Bake in the preheated oven for about 30-35 minutes until golden brown.
  10. If you want to give the whole marzipan aroma, you can also add a few drops of bitter almond aroma to the filling!
