Palak Paneer with Tofu

Palak paneer is a popular Indian dish made from thick, spiced spinach puree. It is traditionally served with paneer cheese, but there is also a vegan version where cheese is replaced with tofu.

Ingredients

  • Tofu – 200 Grams
  • Spinach – 150 Grams
  • Coconut milk – 2-3 tbsp
  • Water – 60-80 Milliliters
  • Bulb onions – 1/2 Pieces
  • Garlic – 2 Cloves
  • Ginger – 10 Grams
  • Bay leaf – 1 piece
  • Zira – 1/3 Teaspoon
  • Garam masala – 1/3 Teaspoon
  • Turmeric – 1/4 Teaspoon
  • Chili Pepper – 1/3 Teaspoon
  • Salt – 1/2 Teaspoon

Directions

  1. Prepare all ingredients.
  2. Preheat a skillet over medium heat. Fry the diced tofu until golden brown. Then transfer to a bowl.
  3. Sauté chopped onion, garlic and ginger with all the spices separately.
  4. Wash the spinach, boil in boiling water for 1-2 minutes. Then dip the spinach in a prepared bowl of cold water and ice cubes (this will help keep the spinach green). Place the spinach in a colander.
  5. Grind the spinach with a blender along with coconut milk and water. At this point, the coconut milk can separate from the rest of the liquid, but this is not critical.
  6. Add the spinach sauce and sautéed tofu to the skillet. Salt, then heat everything together for a couple of minutes.
