Ingredients

  • 2 large plantain (s), green, it works fine even if they are a little yellow
  • 4 egg (s)
  • 2 teaspoons vanilla extract
  • 3 tablespoon coconut oil, virgin, extra virgin
  • 1 pinch (s) salt
  • 0.5 teaspoon ½ baking powder
  • Coconut oil or avocado oil for the waffle iron
  • possibly grade B maple syrup
  • possibly butter (organic)

Instructions

  1. Quarter the plantains and then peel them. Put the plantains and eggs in a blender and mix together to form a smooth batter. Add the remaining ingredients and stir on the highest level for another minute.
  2. Rub or spray the waffle iron with avocado oil or coconut oil. I set the temperature of my waffle iron a little higher than the medium temperature because I like my waffles to be soft.
  3. The specified baking time is per waffle and depends on the waffle iron.
  4. The recipe is based on a pancake recipe that I discovered on an American site.
  5. I live in America and the EL and TL may be a bit bigger here. Please let me know if I need to adjust the quantities. With my waffle iron I get 8 - 9 waffles with 10 x 12 cm.
