Ingredients
- 250 g pasta
- 100 g tomato (s), dried, in oil
- 600 g zucchini
- 2 onion (s), red
- 200 g whipped cream
- 3 tablespoon vinegar (white wine vinegar)
- 1 bunch basil
- 30 g pine nuts
- Pepper, freshly ground

- Cook the pasta in plenty of salted water according to the instructions on the packet. Drain on a sieve and drain well. Drain the tomatoes and collect the oil. Dice the tomatoes. Clean the zucchini and cut into thin sticks. Peel and dice the onions. Heat the tomato oil and sauté the onion cubes until translucent. Add the zucchini sticks and fry for a minute. Add the cream and bring to the boil once, remove from the hob. Immediately mix in the pasta and tomatoes. Season the salad with salt, pepper and vinegar. Rinse the basil, pat dry and cut into strips. Roast the pine nuts in a pan without fat while stirring, mix with the basil into the salad. Let the pasta salad soak for at least two hours.
