Ingredients

  • 500 g pasta, e.. spirals
  • 2 medium onion (s)
  • 1 can (s) tomato (s), cut into pieces
  • 250 g mascarpone
  • 1 bunch rocket
  • 100 g Parma ham, thinly sliced
  • salt
  • pepper
  • butter

Instructions

  1. Cook the pasta according to the package description and keep warm. In the meantime, wash and dry the rocket and pluck it into bite-sized pieces. Cut or chop the onions into small cubes, then sauté with the butter. Add the canned tomatoes (they are of the same good quality all year round, no peeling, simple, aromatic) to the onions and let the liquid reduce a little. Now add the mascarpone and let it melt while stirring. Season the sauce with salt and pepper. Cut the Parma ham (also works with Serrano ham or similar) into approx. 2cm wide strips, add to the sauce with the rocket and pasta and mix.
  2. It may be substantial, but simple and incredibly tasty.
