Ingredients

For the dough:

  • 195 g flour
  • 0.5 teaspoon ½ sugar
  • 115 g butter, (soft)
  • 2 tablespoon sour cream

For the filling:

  • 5 medium peach (s)
  • 3 large egg (s), the yolk
  • 165 g sour cream
  • 155 grams sugar
  • 35 g flour

For the glaze:

  • 150 g jam, (peach)
  • 1 tablespoon orange juice

Instructions

  1. Preheat the oven to 180 degrees and set up a 26cm tart tin, but do not grease it. Put the flour in a bowl and knead into a dough with the soft butter and sour cream. Then roll it out and line the shape with it. Also put the edge and to the side.
  2. Halve the peaches, core them and cut into thin wedges. Then lay out the bottom of the mold in a spiral shape so that the gaps also overlap.
  3. Mix the egg yolks with the sour cream, sugar and flour. Spread evenly over the peaches and bake the tart for about 1 hour in the preheated oven. The dough should be golden brown in color and the filling should be firm in the middle.
  4. If necessary, cover with aluminum foil so that it does not get too dark.
  5. Then take it out and place on a wire rack.
  6. For the glaze, put the peach jam and orange juice in a small saucepan. Mix, heat and pour over the tart. Spread evenly with a brush.
  7. It tastes warm, chilled or cold from the refrigerator. It still looks very nice when you serve it with a dollop of cream on top.
