Ingredients

  • 4 pear (s)
  • 200 ml white wine
  • 0.5 ½ lemon (s), add the juice
  • 50 grams sugar
  • 4 fig (s)
  • 2 tablespoon mustard (fig mustard)
  • 8 slices bacon, lean
  • 3 tablespoon olive oil
  • 3 tablespoon maple syrup
  • salt
  • pepper
  • 4 sprigs rosemary
  • 1 lettuce (Lollo Bionda), cleaned, torn apart
  • 200 g blue cheese, thinly sliced
  • 1 baguette (s)

Instructions

  1. Halve the pears lengthways, remove the core. Halve the figs lengthways as well. Bring the pear halves to the boil with white wine, lemon juice and sugar in a pan, simmer gently over a reduced heat for about 15-20 minutes. Let cool in the stock.
  2. Preheat the oven to 200 ° C.
  3. Brush the cut surfaces of the figs with the fig mustard, press 1 fig and pear halves together, wrap 1 slice of bacon and fix with 1 toothpick each. Put them next to each other in a baking dish. Drizzle with olive oil and maple syrup, season with salt and pepper. Strip off some rosemary needles, sprinkle over the fig and pears, place the remaining twigs in the center of the dish. Cook in the oven for 15 minutes.
  4. In the meantime, distribute the lettuce leaves and slices of cheese on plates, place the finished pear and figs next to them and drizzle the sauce made during baking over them. Serve with the baked, sliced baguette.
