Pepper Stuffed with Stewed Vegetables

Here is a recipe for making peppers stuffed with stewed vegetables. We will stew bell peppers, onions and celery. You can also add spinach here. Then we bake everything in the oven with cheese. Delicious!

Servings: 3-4

Ingredients

  • Bulgarian pepper – 5 Pieces (1 pepper will go into the filling)
  • Celery, stalks – 3-4 pieces
  • Onions – 1-2 Pieces
  • Purple onion – 1 Piece
  • Spinach, bunch – 1 Piece (fresh or frozen, optional)
  • Butter – 20 grams
  • Grated Mozzarella Cheese – 100 Gram
  • Salt, black pepper – – To taste

Directions

  1. So, the first step is to rinse, peel and chop celery, onions – onions and purple and one bell pepper. We cut everything into small cubes. Then heat the oil in a large skillet over medium heat.
  2. Put all the chopped vegetables in a pan, lightly fry, stirring occasionally.
  3. Reduce heat to medium-low, salt, pepper, cover and simmer until soft. If necessary, you can add a little water or a mashed tomato without the skin.
  4. While the vegetables are stewing, place a large pot of water (up to the middle) over the fire.
  5. Rinse the peppers, cut off the top.
  6. We clean peppers from seeds.
  7. Then we throw it into boiling water for 5 minutes. If you are going to use spinach, chop it and add it to the vegetables at the very end of frying. Turn the oven to heat 180 degrees. Remove the peppers boiled in water and cool.
  8. Stuff the peppers with stewed vegetables, sprinkle with grated mozzarella on top. Set tightly in a baking dish, send the peppers and stewed vegetables to the hot oven for 15-20 minutes.
