Pies from Yeast-Free Choux pastry on Kefir, with Cabbage (in the Oven)

I propose to bake pies from yeast-free choux pastry on kefir, stuffed with cabbage stewed with onions, herbs and tomato sauce in the oven. Cabbage pies are a great snack between meals.

Servings: 4

Cook: 1 hour 30 minutes

Ingredients

For the dough:

  • Kefir – 300 ml
  • Eggs – 2 pcs.
  • Flour – 800 g (5 glasses with a capacity of 250 ml)
  • Soda – 1 teaspoon
  • Salt – 1 teaspoon

For filling:

  • White cabbage – 500 g
  • Bulb onions – 1 pc. (80 g)
  • Tomato sauce – 3 tbsp
  • Dill or parsley to taste
  • Sunflower oil (for frying) – 3 tbsp
  • Egg (for greasing pies) – 1 pc.

Directions

  1. Let’s prepare a water bath: pour water into a saucepan, put it on the stove, place the bowl on top so that its bottom is above the surface of the water and does not come into contact with it.
    Pour kefir into a bowl, add salt and soda.
    Turn on medium heat and bring the water in a saucepan to a boil.
  2. Add eggs to the kefir and immediately stir them in with a whisk.
    The contents of the bowl should not boil, but only warm up to about 65-75 degrees (but not 80 degrees, otherwise hardened egg lumps will appear in the mixture).
  3. Remove the stewpan from the stove. Add the sifted flour and mix.
  4. Knead a soft dough that does not stick to your fingers, set it aside for a while.
  5. Chop the cabbage into thin strips.
  6. Peel the onion and cut it into small cubes.
  7. Heat vegetable oil in a frying pan. Put the chopped cabbage in a skillet with heated oil and fry over medium heat for 10 minutes.
    Add chopped onion. Fry the cabbage with onions until soft, stirring occasionally.
  8. Chop the greens finely.
    Add tomato sauce and herbs to the cabbage.
  9. Add 100 ml of water to the pan, cover and leave to simmer for another 15 minutes.
    The cabbage filling is ready, let’s cool it down.
  10. Turn on the oven to heat up to 180 degrees.
    Tear off a small piece of dough from the total mass, roll it into a flat cake with a rolling pin and put the cabbage filling on top.
  11. We fasten the edges of the dough with our fingers, forming a patty. Let’s make the rest of the pies in the same way.
  12. Cover the baking sheet with parchment and put the cabbage pies on it.
    Shake the egg until smooth. Grease the pies with an egg on top.
    We send it to the oven preheated to 180 degrees. We will bake pies on kefir for about 20-25 minutes.
  13. We will immediately serve hot pies with cabbage to the table.
