Ingredients

  • 1 kg wheat flour (type 405)
  • 250 ml milk
  • 200 ml water
  • 10 tablespoon oil
  • 3 teaspoons salt
  • 1 teaspoon, leveled sugar
  • 12 g yeast, fresh
  • 1 medium egg (s)
  • 4 small cloves garlic
  • some olive oil
  • 1 kg cheese (Gouda), young
  • 5 pinches oregano
  • 500 ml tomato (s), passed
  • 35 slices salami
  • Flour for the work surface

Instructions

  1. To prepare the pizza dough, put the wheat flour in a mixing bowl and make a small depression with a tablespoon. Then put the oil, salt, sugar and an egg in the hollow.
  2. Then put the milk and the water in a small saucepan and heat on the stove until it almost boils. It shouldn`t boil under any circumstances, but it should be warm enough to allow some steam to rise. Stir occasionally with a teaspoon.
  3. Now fill up a cup with it and stir the yeast with the teaspoon in it until the yeast is completely dissolved. Add the rest of the milk and water to the flour and then pour the contents of the cup into the mixing bowl.
  4. Now stir everything with the dough hook of a mixer on the lowest setting until the consistency solidifies. Then you have to use your hands. Put some flour on your hands and work the dough on the worktop for at least 10 minutes. After that, the dough is placed in a garbage bag and left to rest on the countertop for half an hour. When the half hour is over, remove the dough and knead again for 5 to 10 minutes, possibly moistening your hands slightly.
  5. Now divide the dough into five equal pieces, shape them into balls and put them in a closed box or roasting pan to stand. After about 1/2 hour you could start baking. However, I prefer to leave the dough in the refrigerator for another day.
  6. For the topping, peel the four cloves of garlic and press them into a glass. Then fill up with a little olive oil and stir well with a teaspoon. Finely grate the cheese.
  7. The oven should be preheated so that it has reached the maximum temperature - approx. 250 ° C.
  8. So you take a ball of dough out of the container and turn it in flour, which you have previously scattered generously on the worktop. Now you form a pizza about 30-32 cm in size, but the edge should be a little thicker. Then place these on an oiled baking sheet. Then you put a large blob of tomato puree in the middle (about a soup ladle full) and use the soup ladle to spread it in a circle from the inside out to the edge. Now sprinkle the pizza with about 2 handfuls of cheese. Then spread 6 salami slices in a circle on the pizza and place a salami in the middle. Spread some more cheese on the salami slices. Now use a teaspoon to spread some of the garlic oil on the pizza and sprinkle with a pinch of oregano.
  9. Bake in the preheated oven for about 15 to 20 minutes, until the cheese is golden brown.
  10. Do the same with the four other dough balls.
