Pkhali from Pumpkin

Phali is a traditional Georgian snack based on nuts and herbs. There are different options for phali, I really like pumpkin.

Ingredients

  • Pumpkin – 300 Grams
  • Walnuts – 60 Grams
  • Bulb onion – 50 Grams
  • Hops-suneli – 1/3 Teaspoon
  • Utskho-suneli – 1/3 Teaspoon
  • Salt – To taste
  • Ground black pepper – To taste
  • Red Wine Vinegar – 1/2 Tbsp spoons
  • Garlic – 1-2 Cloves
  • Vegetable oil – 20-30 Milliliters

Directions

  1. Prepare all ingredients.
  2. Peel the pumpkin from seeds and skin. Cut into large slices, sprinkle with vegetable oil. Bake in the oven until soft.
  3. Fry the walnuts in a dry frying pan, then grind them in a meat grinder or mortar.
  4. Finely chop the onion, then fry with vegetable oil until golden brown.
  5. Chop the pumpkin with a fork until puree.
  6. Add all the spices, salt, minced garlic, wine vinegar, fried onions and walnuts. Stir.
  7. Roll up walnut-sized balls from the resulting mass. Pumpkin phali ready,
