Ingredients

  • 750 g plum (s) or plums, pitted
  • 1 egg (s)
  • 3 egg yolks
  • 3 egg whites
  • 125 g mararine, soft
  • 250 grams sugar
  • 1 packet vanilla sugar
  • 1 pinch (s) salt
  • 150 grams flour
  • 75 g cornstarch
  • 2 teaspoons baking soda
  • 6 tablespoon heavy cream
  • 5 tablespoon desiccated coconut
  • 1 teaspoon lemon juice

Instructions

  1. Grease a 26 springform pan and dust with flour or line with baking paper. Preheat the oven to 150 ° C fan oven.
  2. Mix the margarine, 100 g sugar, vanilla sugar and salt until creamy. Mix in 1 egg and 3 egg yolks individually. Mix the flour, baking powder and starch alternately with cream into the dough. Fold in desiccated coconut.
  3. Put the batter in the springform pan. Stick the prepared plums close together in the dough. Bake for 45-50 minutes.
  4. 20 minutes before the end of the baking time, beat the 3 egg whites with the lemon juice until stiff, sprinkling in 150 g of sugar. Continue beating until the sugar has dissolved and the mixture is shiny.
  5. Take the cake out of the oven 10-15 minutes before the end of the baking time and spread the meringue on top. Increase the temperature to 175 degrees and bake to the end.
