Pork Azu

Azu is a traditional Tatar dish made from beef or lamb, with potatoes and pickles. This recipe uses pork as a variation on the azu theme. 

Cook: 1 hour 14 minutes
Servings: 4

Ingredients

  • Pork – 400 g
  • Potatoes (medium) – 5-6 pcs.
  • Pickled cucumbers (medium) – 2 pcs.
  • Bulb onions – 2 pcs.
  • Garlic – 3 cloves
  • Tomato paste – 2 tbsp
  • Butter – 2-2.5 tbsp
  • Salt to taste
  • Ground black pepper – to taste

Directions

How to cook pork basics:

  1. Cut the pork into medium pieces and fry in oil until the crust begins to appear.
  2. Dice the onion and add to the meat.
  3. When the onion is golden, add salt and tomato paste.
  4. Pour everything with hot water so that it only covers the meat, and simmer pork and onions over low heat for 30-40 minutes under a lid.
  5. Cut the potatoes into large pieces and fry until half cooked.
  6. Finely chop the pickled cucumbers. Pass the garlic through a press.
  7. Mix meat, potatoes, pickles, and garlic, add pepper. Cook the basics of pork with potatoes and pickles for another 15 minutes.
