Pork Baked with Potatoes, Tomatoes and Cheese

Pork baked with potatoes, tomatoes, and cheese is a meat dish that is suitable for both a festive table and a Sunday lunch.

Ingredients

  • Pork (loin) – 600 g
  • Tomatoes – 3 pcs.
  • Bulb onions – 2 pcs.
  • Potatoes – 2-3 pcs.
  • Garlic – 2-3 cloves (to taste)
  • Hard cheese – 250-300 g
  • Mayonnaise – 100 g (to taste)
  • Greens to taste
  • Vegetable oil (for lubricating the mold) – 1-2 tbsp
  • Salt to taste
  • Ground black pepper – to taste
  • Sugar (optional) – 0.5 teaspoon

Directions

  1. Wash, dry, and cut the meat into slices. Use a kitchen hammer to beat off the meat on both sides.
  2. Peel the onion, wash and cut into quarters. Peel the garlic and chop finely. Wash the tomatoes, cut them into slices. Grate cheese on a coarse grater.
  3. Peel the potatoes, wash and grate on a coarse grater. Then add salt to the potatoes and cover with cold water.
  4. Turn on the oven and heat to 180 ° C. Grease a baking dish (I have a diameter of 28 cm) with vegetable oil. Put the beaten slices of meat in a mold, season with salt and pepper.
  5. Top with onion and chopped garlic evenly, add a little salt and pepper. Throw the potatoes in a colander, squeeze well.
  6. Put the potatoes in the next layer, add a little salt and pepper.
  7. Then distribute the tomatoes, add a little salt. Sprinkle with a little sugar if desired. Then brush with mayonnaise. The last layer is grated cheese.
  8. Place the dish in the oven on a medium level. Bake pork with potatoes, tomatoes, and cheese at 180 ° C for about 50-60 minutes (until the potatoes are tender). If, after 40 minutes of baking, the cheese crust begins to brown, and the potatoes are not yet ready, then I recommend covering the form with foil and sending it back to the oven. Then the potatoes will come to readiness, and the casserole will not burn or dry out.
  9. Pork baked with potatoes, tomatoes, and cheese is ready!
