Ingredients
- 1 pork fillet (s), a approx. 500 grams
- some salt and pepper
- a little fat
- 30 g butter
- 3 tablespoon olive oil
- 200 g Goronzola
- 0.5 dl ½ white wine
- 1 dl cream, (full cream)
- 12 sage leaves, cut into fine strips

- Preheat the oven to 90 degrees top and bottom heat. Prepare oven-safe dishes with a wire rack on top.
- Season the fillet with salt and pepper, heat some frying fat in a frying pan, fry the fillet all around for 5 minutes and cook in the oven at 90 degrees for an hour and 20 minutes.
- Just before the fillet is ready, heat the butter and olive oil in a sauce pan, add the Gorgonzola and melt the Gorgonzola while stirring with a whisk. Add the white wine, let the sauce simmer briefly, add the cream, add the sage leaves and simmer the sauce briefly while stirring.
- Prepare three preheated plates. Take the fillet out of the oven and cut into thin slices. Form a saucepan with the sauce on the plates and distribute the fillet slices on top.
- Wide noodles go very well with this.
