Potato Boats Stuffed with ham and Sweet Pepper Omelet

A very original breakfast or hot snack – an omelet with ham and vegetables, baked with cheese in boiled potato boats. Such a hearty and beautiful dish is prepared quite simply and does not take much time. You can experiment with a potato boat filling by adding different products and getting a new taste each time. It’s worth taking note of the recipe!

Ingredients

  • Potatoes – 200 g (2 pcs.)
  • Eggs – 3 pcs.
  • Milk – 10 ml
  • Ham – 30 g
  • Bulgarian pepper – 40 g
  • Onions – 20 g
  • Hard cheese – 30 g
  • Salt to taste
  • Ground black pepper – to taste
  • Vegetable oil (for frying) – 1 tbsp

Directions

  1. Prepare foods according to the list. Instead of red onions, you can use white ones. The ham can be replaced with sausage.

    Peel the onion. Peel sweet peppers from seeds.
  2. Put the peeled potatoes in a saucepan, add water, put on maximum heat. Bring water to a boil, reduce heat to low and cook potatoes for about 20 minutes, until tender. Then drain the water and leave the potatoes to cool.
  3. Turn on the oven to heat up to 180 degrees.
    Cut onion, bell pepper and ham into small cubes.
  4. Grate cheese on a fine grater.
  5. Combine eggs, milk, salt and pepper in a deep bowl.
  6. Add bell peppers, onions and ham. Mix.
  7. Heat vegetable oil in a skillet over medium heat. Add the egg mixture and cook for about 1-2 minutes.
  8. Once the edges of the omelet are white, stir to break up large lumps. While stirring, fry over medium heat for about 2-3 minutes. The eggs should remain soft.
  9. Peel the boiled potatoes, cut in half. Remove the middle from each half of the potato with a teaspoon so that “boats” are obtained. Place the potato boats in a baking dish.
  10. Fill each potato boat with the prepared filling.
  11. Sprinkle with grated cheese on top and send to the oven, preheated to 180 degrees, for about 7-10 minutes.
  12. Potato boats stuffed with an omelet with vegetables and ham are ready.
