Potato Casserole with Vegetables (in a Slow Cooker)

The potato casserole is tasty and satisfying enough. A slow cooker will help us in preparing a vegetable casserole. First, let’s prepare the mashed potatoes. Then we stew the vegetables for the filling. And then we’ll bake everything together.

Ingredients

  • Potatoes – 500 g
  • White cabbage (young) – 300 g
  • Carrots – 1 pc.
  • Celery (stems) – 100 g
  • Bulb onions – 1 pc.
  • Green onion – 3-4 feathers
  • Milk – 100 ml
  • Butter – 90 g
  • Salt to taste

Directions

  1. Cut the peeled potatoes at random, put them in a bowl, fill them with water, and start the Soup mode. The manufacturer of our device provides a time of 1 hour, which is programmed automatically. We need to boil mashed potatoes until cooked, and this will take no more than 40 minutes, so we turn off the multicooker manually after this time.
  2. While the potatoes are boiling, cut the cabbage into strips. Chop the onion finely and grate the carrots. Chop the celery stalks.
  3. The potatoes are boiled, and we will put the chopped vegetables in the freed-up multi can. Stir, add salt, add water (about 0.5 cups). Let’s turn on the “Extinguishing” mode for 40 minutes.
  4. While the vegetables are stewing, prepare the puree. Put the finished potatoes in a suitable dish. Add butter and pour in boiled milk. Using the hand blender, turn everything into a homogeneous potato mass.
  5. Finely chop the green onion feathers. Pour into the finished puree and mix. Put the stewed vegetables in a bowl.
  6. We grease the capacity of the multicooker with plenty of butter and begin to shape our future casserole. First, put half of the mashed potatoes. Distribute the cabbage filling evenly on top.
  7. Cover everything with the rest of the puree. Turn on the “Baking” mode. Since we have all the ingredients already prepared, it will take 15-20 minutes to cook potato casserole in a slow cooker.
  8. Do not layout the finished casserole immediately, as it should cool slightly and harden. After 15 minutes, you can gently begin to lay out the potato casserole with vegetables on the plates and take a sample. You can serve a casserole with sour cream.
