  • 100 g butter
  • 100 ml cream
  • salt
  • nutmeg
  • 500 g pea pod (s)
  • 4 egg (s)
  • Curry, Madras-
  • pepper

Potato – Pea Puree with Curry – Fried Egg

Instructions

  1. Clean and blanch the peas.
  2. Peel and cook the potatoes and puree them with butter and cream.
  3. Fold the prepared peas into the puree. Season to taste with the above-mentioned spices.
  4. Prepare the fried eggs in a pan. Dust with salt, pepper and madras curry to taste.
  5. Shape the potato and pea puree into (flat) balls, place them on the plate and put on the fried egg.
