Potato Sorcerers in Belarusian

An incredibly tasty and easy-to-prepare dish – Belarusian-style potato sorcerers! Cook for health!

Ingredients

  • Potatoes – 10-12 pcs.
  • Minced meat – 300 g
  • Large onions – 1 pc.
  • Salt to taste
  • Ground black pepper – to taste
  • Butter – for frying and baking
  • Sour cream (for serving) – to taste

Directions

  1. First, prepare the minced meat filling. To do this, rub half the onion on a fine grater and add it to the minced meat. Add salt and pepper there. Mix well. The filling for the sorcerers is ready.
  2. Grind fresh potatoes on a fine grater. Together with the potatoes, grind the remaining onions – this way the potatoes will not darken. Put the grated potatoes into cheesecloth folded in 2 layers. We squeeze the potatoes well. Leave the juice in a plate or bowl to settle.
  3. As soon as the juice has settled, we pour it into the sink and add the starch remaining on the plate to the potatoes. Salt, pepper.
  4. We shape the sorcerers with our hands, giving them an oval shape: we make a potato cake, put the minced meat filling in the middle, put a little more potato mass on top to close the filling. I tried to put in more meat so that the sorcerers would turn out to be more satisfying and tasty. Therefore, they turned out to be quite large.
  5. Fry the formed cutlets from grated potatoes with meat filling in butter on all sides until a delicious crispy crust is formed.
  6. We shift the potato cutlets into a heat-resistant form. Ideally, it should be a heavy-bottomed pan, such as a duck, but I don’t have one, so I put the wizards in a smaller pan with a removable handle. Add pieces of butter to the mold, cover the mold with foil and send the potato sorcerers to the oven, preheated to 200 degrees, for 50 minutes. 10 minutes before the dish was ready, I removed the foil so that the sorcerers would fry a little.
  7. Traditionally, sorcerers are served with sour cream! The dish is incredibly tasty and satisfying!
