Potatoes with Herbs and Olives

For boiled potatoes, prepare an oil dressing with herbs and olives. Potatoes are seasoned hot and served immediately.
Ingredients
- Finger potatoes (small oblong) – 400 g
- Arugula (chopped) – 1/3 cup
- Pitted olives (chopped) – 2 tablespoon
- Olive oil – 1 tablespoon.
- Small lemon zest – 1/4 teaspoon.
- Lemon juice – 1 tablespoon
- Dijon mustard – 1 teaspoon
- Ground black pepper – 1/4 teaspoon.
- Chopped parsley – 1 tablespoon
- Fresh basil (chopped) – 1 tablespoon.
- Green onions (chopped) – 1 tablespoon.
Directions
- Cut the potatoes into pieces 5 centimeters long, put them in a saucepan, add water, bring to a boil. Reduce heat and simmer potatoes until soft, about 5 minutes. Put the cooked boiled potatoes in a bowl.
- In a small bowl combine olive oil, lemon zest, juice, mustard and black pepper, beat with a fork. Add arugula, olives, parsley, basil, and green onions, mix well. Pour boiled potatoes with this dressing, mix.
- Serve the boiled potatoes immediately.
