Ingredients

  • 1 packet puff pastry
  • 2 pear (s)
  • 250 ml white wine or Prosecco or water
  • 1 pinch (s) cinnamon powder
  • 2 packs vanilla sugar
  • 4 dashes lime juice
  • 1 egg yolk
  • 4 tablespoon sugar
  • 25 g chocolate laze or dark chocolate or couverture
  • sugar, brown
  • powdered sugar

Instructions

  1. Peel and halve the pears and remove the core, then cut into a fan-like pattern.
  2. Caramelize the 4 tablespoons of sugar with 4 tablespoons of wine in a pan and add the pears. Sauté gently and ladle with the wine syrup, then add the rest of the wine and simmer the pears for 12-15 minutes until soft, add lime juice, cinnamon and vanilla sugar and pour the liquid over the pears again and again.
  3. Roll out the puff pastry and cut into four pieces, place one half of the pear on each and roll the edges so that an edge is formed. Shape the whole thing like a pear. Sprinkle the pear with brown sugar. Brush the edges with egg yolk and bake the tartlets for approx. 25 minutes at 180 - 200 ° C.
  4. Thicken the rest of the caramelized, cooled pear juice with powdered sugar and drizzle over the edge and over the pear half. Then heat the chocolate icing and drizzle over the pears.
  5. Let everything cool slightly, but serve still warm. If you want, you can also serve cream.
