Ingredients

  • 1 kg pumpkin (s) (e.g. Hokkaido or nutmeg pumpkin)
  • 2 onions)
  • 4 m. Apples
  • 1 lemon (s), add the juice
  • 2 teaspoons curry
  • 1 teaspoon vegetable stock, (instant)
  • 100 g whipped cream
  • salt and pepper
  • oil
  • Chilli powder

Instructions

  1. Divide the pumpkin, core it, cut into wedges and peel. Cut the pulp into pieces. Peel and dice the onion. Peel, quarter, core and chop the apples. Drizzle with lemon juice. Heat the oil, stew the onion and pumpkin in it for about 5 minutes. Dust the curry over it and sweat it. Deglaze with 1/4 liter of water and cream and bring to the boil. Stir in the broth and simmer for about 15 minutes. Add the apple and cook for another 10 minutes. Season to taste with salt, pepper, curry and chilli.
