Ingredients

  • 100 g quark (low-fat or semi-fat quark)
  • 1 egg yolk
  • 2 teaspoons mustard (e.g. Dijon)
  • salt and pepper
  • 1 teaspoon vinegar (white wine or herb vinegar)
  • 1 small red pepper
  • 3 tablespoon vegetable broth

Instructions

  1. For the mayonnaise, mix all the ingredients together, including the vinegar. Cut the peppers into very small pieces. Steam with the broth until soft for about 10 minutes. Let cool and mix with the quark.
  2. Goes well with swellings (jacket potatoes), grilled meat, cold roasts, vegetables, etc.
